Sweet Corn Soup
Sweet corn soup = summer in a bowl!
Made from this recipe using fresh ingredients from the local farmer's market. My market had red scallions instead of green so I substituted them for the garnish. It was very filling for a dish with so few ingredients. And, most importantly it was husband approved. Leftovers made a tasty lunch the next day.
